When you go to a Vietnamese restaurant, or Chinese restaurant, you usually see a jar of chili garlic oil in addition to other condiments such as fish sauce, soy sauce, salt and pepper. This chili garlic oil is particularly good to add to stir fry dishes, soup, noodle dishes or any kind of dishes to inject additional spiciness to the dish.
Recipe for Vietnamese Chile Garlic Oil Mix – Ớt Tỏi:
3 clove garlic, finely chopped
1/4 tsp dried red chili flakes
6 tbsp cooking oil
In a small sauce pan, heat the oil over medium heat until hot. Add the garlic and stir it well in oil for 30 seconds or until fragrant. Add chili flakes and stir it well. Let the mixture bubble and sizzle for 3 minutes, occasionally stir the mixture up to ensure even cooking and make sure it does not burn. When the mixture has a rich orange red in color and a pleasant toasty fragrance, remove it from heat and let it cool completely.
Transfer the mixture to a small jar and keep it on the dining table for frequent use.
Makes 1/2 cup
